Overnight oats is my favourite quick breakfast. Some weeks are just so busy that I know I wont have enough time to prepare breakfast. So I usually make bulk overnight oats on Sunday which lasts me until Wednesday.

Sometime I get bored of plain cinnamon banana overnight oats, so I thought I would see whats in season and try something new. Strawberries are in season at the moment in South Africa and I thought I’ll try that. My favourite dessert is anything berries and cream so strawberries and cream it was!

The double thick yoghurt is the ‘cream’ part. I love starting my day off with some yoghurt because of all the probiotics in it.

I then decided to make a type of parfait with overnight oats.

First layer:Chia seed pudding

Second layer: Overnight oats

Third layer: Double thick yoghurt layer

Fourth layer: Strawberry chia jam

Delicious strawberries & cream overnight oats for the on the go individual

Ingredients
  • 1 Banana Medium
  • 8 Strawberries
  • 3/4 Cup Double thick yoghurt Greek yoghurt could also work
  • 1/2 Cup Water
  • 1 Cup Dry whole oats
Instructions
  1. Blend the banana, strawberry, yoghurt and water in a blender until it is the consistency of a smoothie.

  2. Pour into a tupperware container and add in the oats.

  3. Leave overnight to soak

  4. Eat cold as is or make a beautifully layered breakfast parfait

  • No cooking is required but the oats can be heated up if preferred
  • The oats can be made in bulk and be stored in the fridge for up to 3 days
