Cooking or roasting fish can be very tricky – it dries out quickly and can become tasteless if not well seasoned. Because of this we tend to eat less fish, missing out on crucial nutrients like Omega 3. Try this recipe for easy, fool-proof and delicious salmon steaks.

Ingredients:

  • 2x 150g Salmon Steak
  • 2 Cloves Garlic
  • ½ Wheel of Feta
  • ½ Lemon, small, juiced
  • ½ Lemon, small, zest
  • ¼ cup Parsley, fresh, finely chopped
  • 2 Tbsp. Chives, fresh, finely chopped
  • 1 Tbsp. Thyme, fresh, finely chopped
  • Freshly Ground Pepper, to taste
  • Pinch of Salt

Method:

  1. Preheat oven to 200˚C
  2. Prepare an ovenproof dish by lining it with baking paper
  3. Mix all the ingredients (except the salmon) together in a bowl
  4. Place the salmon in the ovenproof dish, skin down
  5. Put lemon and herb mixture on top, covering all the edges
  6. Bake in the oven for 20 minutes
  7. Serve warm

TIPS:

  • On a tight budget? Replace salmon with trout or hake steaks
  • Garlic and chili butternut and mixed salad compliments the salmon well
  • Substitutes for a Mediterranean dish:
    • the butternut with garlic baby potatoes
    • mixed salad with a Greek salad
  • Leftovers can be used in a salad for light lunch the next day
