Serves 4 – 6
This roasted vegetable recipe is so easy to make – any variety of vegetables can be used.
1 Onion, medium
125 g Mushrooms, roughly chopped
6 – 8 Carrots, baby, whole
3 – 4 Carrots, medium, roughly chopped
400g Broccoli and Cauliflower mix
4 – 6 Tbsp. Olive oil
Course pepper to taste
Pinch of Paprika
1/2 tsp. Garlic, crushed, dried
- Preheat the oven to 200 degrees Celsius on the baking setting.
- Toss all the vegetables together in an ovenproof dish, drizzle with oil, sprinkle pepper, paprika and garlic over and mix well.
- Place in the oven for 40 – 45 minutes or until vegetables are tender.
- TIP: broccoli and cauliflower florets can dry out quickly – cover ovenproof dish with foil while the vegetables are in the oven.
