BOBOTIE WITH FLAVOURED RICE

Yields 6 portions

 

INGREDIENTS:

1 slice white bread, thick

125ml milk

25ml oil

2 onions, in slices

2 garlic cloves, chopped fine

15ml ginger, fresh, grated

30ml curry powder

5ml tumeric

3ml cumin, fine

3ml coriander, fine

1kg mince, lamb or beef

20ml apricot jam

12 almonds, cut into quarters

60ml vinegar

10ml salt

3ml pepper, black, freshly grinded

125ml raisins, seedless (optional)

4 lemon or bay leaves

 

TOP LAYER:

2 eggs

250ml milk

salt and pepper, to taste

 

INSTRUCTIONS:

Pre-heat the oven to 180°C. Lightly grease an ovenproof dish. Soak the bread in the milk and mash it with a fork. Keep one side. Heat the oil and sauteé the onions until soft. Add the ginger, garlic and other spices and sauteé until fragrant.

Add the mince in small amounts and fry until almost brown. Add the jam, almonds, vinegar, salt, pepper, raisins, bread and apples/peaches. Use a fork to mix lightly. Ladle the mince mixture into a greased ovendish, don’t press with a fork. Stick the lemon- or bay leaves into the mixture.

TOPLAYER:

Whisk the milk and eggs together and flavor with salt en pepper. Pour over the mince and bake for 40 minutes. Serve with chutney and flavoured/yellow rice.

 

SERVING SUGGESTION:

Serve with non-starchy vegetables or a salad to make this a delicious balanced meal
